Maqui-Berry-Coconut-Lime Cashew Chz Cake

OOOOOHWHEEE! What a delectable, refreshing, nourishing, beauuuuutiful pie this is! With deep, royal, purple hues, this pie will transport you right into the throne of your dreams! Note: You can use frozen blueberries and cherries--just thaw them out a little before processing, or else they might be gritty.

ingredients:

Almond-Date-Coconut Crust

1 cup Raw Almonds 

3/4 cup Coconut Flakes

3/4 cup medjool dates, pitted

2 T Cacao Nibs

a pinch of Pure Vanilla Powder, 

sea salt

Maqui-Berry-Coconut-Lime Chz Cake

2 cups Cashews OR Cashew Butter

1 cup Coconut Flakes

1-2 cups blueberries

2 cups cherries, pitted--some reserved for incorporating into batter whole

1/2 cup honey, maple syrup, or other liquid sweetener

1/4 cup Coconut Oil

1/2 cup lime juice

3 T Maqui Berry Powder

2 pinches Pure Vanilla Powder

 

to create: 

1. Blend all Crust ingredients. In a parchment-lined pie pan, press the "dough" evenly into the pan. Set in freezer.

2. In a food processor, blend all Chz Cake ingredients except the reserved cherries. Blend until smooooooooth!

3. Add reserved cherries into the mixture and spread "batter" evenly on top of the crust. Sprinkle on whatever additions you want on top! Cherries, cacao nibs, coconut flakes, a little bit of cacao paste shavings….get creative!

4. Set in freezer for at least 1 hour.

5. SPREAD THE LOVE!
